I typically don’t make kitschy things that look like things. Miniature foods tend to possess a level of delicacy that I do not have the patienct for. However, I have a soft spot boozy food.
So, after seeing the idea of making citrus rinds into Jell-O shots for the eleventy-billionth time, I caved and made them. While they really would be perfect adorned next to Hello Kitty Lush Edition, I have to admit that they are pretty ridiculous and, dare I say, fun.
The only real downside to these is the time it takes to clean the rinds. It isn’t hard, but it is definitely not as quick as filling a plastic cup.
- 6 limes – halved and pulp removed
- 1 3 oz box of Watermelon Jell-O
- 1 cup boiling water
- 2 cup cold vodka
Prepare limes by cutting into halves and removing the pulp from the rind. The trick is to first juice the limes (save the juice for limeade or another use). Then, using a paring knife or your finger, pry the pulp from the rind. Once it beings to peel back, you use your thumb to gouge out the fruit leaving a clean rind.
Place the clean lime halves into a cupcake tray to stabilize during refridgeration.
Add boiling water to gelatin mix and stir until dissolved. Two minutes. Stir in cold vodka and pour into lime halves. Refrigerate until firm.
Once firm, quarter limes halves with a sharp knife.
